Decorating Basics

I recommend this kit! It is really fun just to experiment with it, and you can turn any old cake into one that you would see in a bakery window! Have a nice President's day!

Apology & Peanut Butter Cookies

I am so sorry I have not posted for over a month. Life has swallowed me up! (Like a cupcake!) In two weeks I will be leaving for Puerto Rico, and I'm afraid not much baking will go on there either. Horay! I will post pictures though! Currently there is a blizzard coming.... so of course I'm making cookies! You have got to be ready for anything, right? Here is the recipe I am using right now. I better publish this post-the timer just went off, and it smells just right!

Peanut Butter Cookies Recipe:

INGREDIENTS

  • 2 tablespoons maple syrup
  • 3/4 cup packed brown sugar
  • 1/2 cup butter, room temperature
  • 1/2 cup peanut butter
  • 1 egg
  • 1 1/4 cup flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

METHOD

1 Beat the butter until creamy, 2 minutes. Add the sugar, beat for 2 more minutes. Mix in the peanut butter and egg. Mix together the dry ingredients - flour, baking soda, baking powder and salt. Stir the dry ingredients into the sugar butter mixture.

2 Preheat oven to 375°F. Shape dough into 1 1/4 inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with a fork. Bake until light brown, 9 to 10 minutes. Cool on baking sheets for a minute; transfer to rack to cool completely.
For chewier cookies, bake at 300°F for 15 minutes.
