Cookies

 Hi! I can't believe this is my last day of summer vacation! I hope everyone has had a fun summer. Here is a huge plate of cookies I made! If you have noticed I have been posting all kinds of sweet baked treats (besides cupcakes I mean.)  I just want to let you know this is definitely still a cupcake blog, and  I have just been branching out a bit lately!

Cupcake Creations


These are a few super cute creation that you can make from my favorite cupcake decorating books:

       These are not made by me, but I have eaten the Chinese Take-Out cupcake and made the Sunflower Cupcake. These are so fun to make and I suggest them! Depending on two things of course.  Before you go out and get two packages of food-coloring, enough candy for Halloween, and millions of sprinkles remember that these are nice to look at, but they are insanely sugary. Sometimes, (depending on the occasion) simple is much better. For a formal party (wedding, anniversary, etc.) powdered sugar and a raspberry can look professional and very impressive as well as an easy frosting spread nicely with a tiny fondant flower here, or a little piece of pretty candy over there. For things like birthday parties and school bake-sales you want to sell your cupcake with it's cuteness! (That's when these ideas come in.)

Lemon Cream Cupcake


I have made these before, and they are delicious! 
Just go easy on the sugar.

Lemon Cream Cupcakes Ingredients

1 cup butter — softened
2 cups organic unbleached sugar
1/2 cup yogurt
1/4 cup applesauce
2 teaspoons grated lemon rind
1 teaspoon vanilla
3 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
2 cups sour cream

Frosting Ingredients

3 tablespoons butter — softened
2 1/4 cups organic unbleached sugar
5 tablespoons lemon juice
3/4 teaspoon vanilla
1/4 teaspoon grated lemon rind
1 or 2 tablespoons milk

Lemon Cream Cupcakes Directions

In a mixing bowl, cream butter and organic unbleached sugar.
Mix milk, yogurt, and applesauce.
Add lemon peel and vanilla; mix well.
Combine dry ingredients; add to creamed mixture alternately with sour cream (batter will be thick).
Fill greased or paper-lined muffin cups with 1/4 cup of batter.
Bake at 350 for 25-30 minutes or until a toothpick inserted near the center comes out clean.
Cool for 10 minutes; remove to wire racks to cool completely.

Lemon Cream Cupcakes Frosting Directions

Cream butter and organic unbleached sugar in small mixing bowl.
Add lemon juice, vanilla, lemon peel, and milk; beat until smooth.
Frost cupcakes.

Start baking,

Lemon Cupcakes

I made these mini lemon cupcakes the other day. The decoration is fondant which is just like edible modeling clay. It's so fun to work with! They have a sweet lemon creme filling.
